The Big ‘Saved by Cake’ Bake-Off #2 – Rock Cakes

Rock Cakes

Marian Keyes rock cakesIf you saw last month’s post then you might remember that the very first cakes I started this challenge with were the strawberry cupcakes.  This month I was experimenting with another simple but delicious cake – something you’re guaranteed to fall in love with.

The most important thing I need to tell you in connection with rock cakes is: don’t be put off by its name or the way they look. I know they look simple and I know you think ‘who would want to eat a cake that’s like a rock?’ but trust me – they’re really good. I’ve never actually tried rock cakes before so it was a pleasant surprise.

Usually I’m not a big fan of sultanas or mixed peel but funnily enough I still liked rock cakes. Actually, I didn’t have any mixed peel when I decided to try these so I replaced them with dried cranberries (and sultanas) and I also replaced demerara sugar (which you’re supposed to sprinkle the cakes with) with .. you know, normal sugar. Other than that I followed Marian’s recipe and they turned out to be fantastic!Marian Keyes rock cakes

If you’re always in a hurry, or if you’re a beginner, I would definitely suggest that you try these cakes first because they’re very easy to make (it literally takes 20 minutes). They’re not the most spectacular, extravagant or spicy cakes you’ve ever had but they’re buttery and comforting and they’re perfect if you want to curl up in bed with a good book and a mug of tea or hot chocolate and some snacks. :)

    Maybe it’s for the best that I didn’t get this book…I must be way below beginner level as I’ve no clue what mixed peel is, what sultanas are or what demerara sugar is!! lol

    I’d never eaten a rock cake before making them using the Saved by Cake recipe either and was pleasantly surprised. I thought they’d be hard (going by the name) but they were lovely.

  6. I have a signed copy of this one and I’ve still yet to make anything from it! My oven went all funny right after I got it, and while it still technically works, the heat and timer settings are just based on guesswork now. Baking ain’t really the best idea until I get a new one!

    It sucks though, because there are so many recipes in here I want to try!

  7. I haven’t tried Rock cakes before, but I think I’ll like them with some chocolate pieces in it ^^ I’m going to show this one to my sister, she is the cook, I like to taste :p haha.
